  • Beetroot Pasta With Tofu

    INGREDIENTS

    • Magic Mills Tagliatelle – 10 dkg
    • Beetroot – 10 dkg
    • Salt, pepper
    • Tofu – 20 dkg
    • Soy sauce – 0.5 dl
    • (Parmesan to serve – can be omitted)

    PREPARATION

    1. Cook the pasta in boiling salted water for the time indicated on the packet, drain, rinse and toss in a little oil.
    2. Cook the beetroot until soft. Leave them to cool in their own juice, then puree them, adding more juice if necessary.
    3. Mix the beetroot puree with the pasta and season to taste.
    4. Stir-fry the tofu in soy sauce in a hot frying pan, add to the pasta and serve.
