  • Gluten-Free Buns (Hamburger Buns)

    INGREDIENTS

    • UniMix Universal Flour Mix – 220 g
    • Tapioca starch – 30 g
    • Egg size L (65-70 g) – 1 pc and 1 pc for glazing
    • Liquid – 250 ml (130 ml water and 120 ml milk)
    • Yeast – 3 g
    • Sugar – 15 g
    • Salt – 2 pinches
    • Oil – 8 g and to coat the pan
    • Garnish: sesame seeds, linseeds, poppy seeds, etc.
    • Heat-resistant baking tin

    PREPARATION

    1. Preheat the oven to 45-50°C from bottom to top. Pour 1-1.5 dl of water into a heatproof bowl and place in a corner of the oven.
    2. Mix the flour and starch together. Add the other dry ingredients, then the oil and eggs.
    3. Start mixing with the mixer on low speed, adding the room temperature liquid in a continuous thin stream.
    4. Mix on medium speed for at least 4-5 minutes until the dough is lump-free.
    5. Meanwhile, lightly grease the tins. I used a 12cm diameter heatproof ceramic bowl.
    6. Using a scale, divide the dough evenly between the 4 tins (145 – 147 grams). Use a greased spoon to smooth the surface evenly. Brush with beaten egg and sprinkle with seeds.
    7. Bake in a pre-heated oven at 50 degrees for 15 minutes, then increase the heat to 170 degrees Bottom-Top.
    8. When it reaches this temperature, bake for 35 minutes. The temperature is measured with an analogue oven thermometer inserted into the oven.
    9. Place the baked buns on a wire rack with the pan to cool. Using a NON-sharp knife, gently pry the buns out of the tin by reaching underneath.
    10. Do not cut until the buns are completely cool.
    11. Chef’s tip 1: If you put greaseproof paper in the ceramic baking dish, the bun will be easier to remove, but the bottom will be slightly dented.
    12. Chef’s tip 2: The size of the egg is very important; if you use a smaller egg, the bun will be bigger, but it will have large holes in the structure.
    13. Cook’s tip 3: Make sure that the water dish in the oven is not under the hamburger baking tray, as this will prevent the bottom from being cooked through.
    14. STORAGE: No need to refrigerate or freeze! Covered with a tea towel and left on the counter, it will keep its consistency for 3-5 days without heating or microwaving.
