    Completely free-from ingredients

    • Magic Mills UniMix Universal Flour Mix – 300 g
    • Lukewarm water – 210 ml
    • Margarine – 60 g
    • Yeast – 12 g
    • Salt – 3 g (1 small teaspoon)
    • Sweetener to taste

Filling: cocoa powder and sugar or sweetener in any proportion (for this quantity, 30 grams of cocoa powder and 90 grams of sugar are sufficient, or an amount of sweetener to taste).

    PREPARATION

    1. Keep the margarine in a warm place so that it can be easily crumbled. Crumble the flour with the margarine, then knead it into a dough by thoroughly mixing with the other ingredients.
    2. The dough might feel moist at first touch, which is natural. Let it rest for 5 minutes to allow the flour mixture time to absorb the liquid. After 5 minutes, form it into a loaf.
    3. Dust the table with a very thin layer of flour, then roll out the dough into an approximate rectangle about 4 mm thick. Brush the rolled-out dough with water or cooking oil, then evenly sprinkle the cocoa powder mixed with sugar or sweetener over it.
    4. Roll up the dough, and with a sharp knife, slice it into swirls about 2-3 cm thick. Place them on a baking sheet lined with parchment paper, then cover with a clean kitchen towel. Space the swirls slightly apart so they don’t touch each other as they rise. Keep the covered baking sheet in a warm, draft-free place for about 45-50 minutes. During this time, the swirls should rise nicely. Meanwhile, preheat the oven.
    5. For a conventional oven, bake at a high setting. For a convection oven, set it to lower-upper fan mode at 200°C.
    6. After the rising time, you can spray the swirls with water or brush them with cooking oil. The baking time is about 15 minutes. The swirls are done when their sides are golden brown, but the bottom is not burnt.
